If both Ethereal and Everness are in use at the same time, it would be nice if Everness would generate Ethereal items over its own implementation where it makes sense. For example, Ethereal already provides bamboo, why Everness adds its own implementation if Ethereal is already installed, essentially duplicating the work?
The reason to generate Ethereal items (if available) over Everness is compatibility. Not only more mods support Ethereal items than Everness (which is understandable, since Everness is a relatively young mod), but also virtually every texture pack does so as well.
